These Quick Chocolate Mint Cookies with Andes Chips are a happy accident turned into a must-make recipe. With crisp edges, fudgy centers, and pools of creamy mint, they come together in under 20 minutes using simple pantry ingredients.

Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour, spooned and leveled
  • 1/3 cup (30g) unsweetened cocoa powder (Dutch-process preferred)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup (about 130g) Andes creme de menthe chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes with a hand mixer on medium speed. Scrape down the sides once.
  3. Add the egg and vanilla, and beat until combined, about 30 seconds. The mixture may look slightly curdled.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Add the dry ingredients to the wet mixture in two additions, mixing on low speed after each until just combined. Stop mixing when a few streaks of flour remain.
  6. Using a rubber spatula, gently fold the Andes chips into the dough until evenly distributed. Do not use the mixer.
  7. Scoop the dough into balls about 1.5 tablespoons each and place them on the prepared baking sheet about 2 inches apart.
  8. Bake for 8-10 minutes. The edges should be set and tops cracked, but the centers should still look soft and slightly puffy.
  9. Cool on the baking sheet for exactly 5 minutes, then transfer to a wire rack to cool completely or serve warm.

Notes

For best results, use Dutch-process cocoa and name-brand Andes chips. Do not overmix the dough. If your kitchen is warm, chill the scooped dough for 15 minutes before baking. Let the baking sheet cool completely between batches. Cookies taste even better on day two.
