Instructions

  1. Brown the butter: Place 1 cup unsalted butter in a small saucepan over medium heat. Melt completely, then continue cooking, stirring occasionally, until it turns golden brown and smells nutty (about 5-7 minutes). Remove from heat immediately and pour into a heat-safe bowl. Let cool for 10 minutes.
  2. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  3. In a large mixing bowl, combine cooled brown butter, 1 cup granulated sugar, and 1/2 cup packed light brown sugar. Whisk until well combined. Add 1 large egg and 1 teaspoon vanilla extract, whisk until smooth. Add 3/4 cup pumpkin puree and stir until fully incorporated.
  4. In a separate medium bowl, whisk together 2 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 teaspoon salt, 2 teaspoons pumpkin pie spice, and 1 teaspoon ground cinnamon.

  6. In a small bowl, mix together 1/4 cup granulated sugar and 1 tablespoon ground cinnamon for the coating.
