A creamy, cheesy corn casserole with a golden, buttery cracker topping that’s perfect for cozy nights. This easy side dish comes together in about 40 minutes with simple pantry ingredients.

Ingredients

Scale
  • 4 cups frozen corn (about 20 oz)
  • 2 cups sharp cheddar cheese, shredded (8 oz)
  • 1 cup sour cream (8 oz)
  • ½ cup unsalted butter, melted (1 stick)
  • 2 large eggs, lightly beaten
  • 2 tablespoons all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • 1½ cups butter crackers, crushed (about 30 crackers, like Ritz)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, whisk together sour cream, ¼ cup melted butter, beaten eggs, flour, sugar, salt, and pepper until smooth and creamy.
  3. Add frozen corn and 1½ cups shredded cheddar cheese to the bowl. Stir with a spatula until corn and cheese are evenly coated.
  4. Pour the corn mixture into the prepared baking dish and spread into an even layer.
  5. Sprinkle the remaining ½ cup shredded cheddar cheese evenly over the top.
  6. In a small bowl, combine crushed butter crackers with the remaining ¼ cup melted butter until all crumbs are coated. Sprinkle evenly over the cheese layer.
  7. Bake for 35-40 minutes, until bubbly around the edges and the topping is deep golden brown. If browning too quickly, tent loosely with foil after 25 minutes.
  8. Let rest for at least 10 minutes before serving to allow the casserole to set.

Notes

Shred your own cheese for best melting. Do not thaw the frozen corn—use it straight from the bag. Crush crackers coarsely for better texture. Let the casserole rest for 10 minutes after baking to set properly. For a spicier version, add diced green chiles and pepper jack cheese. For a bacon upgrade, add crumbled cooked bacon. To make gluten-free, use gluten-free flour and gluten-free butter crackers.
