This classic fantasy fudge recipe is the one—creamy, chocolatey, and melt-in-your-mouth perfect. Made with Marshmallow Fluff, it’s quick, easy, and works every time without a candy thermometer.

Ingredients

Scale
  • 3 cups granulated sugar
  • ¾ cup unsalted butter (1½ sticks), cut into chunks
  • ⅔ cup evaporated milk
  • 1 jar (7 ounces) Marshmallow Fluff, at room temperature
  • 1½ cups semi-sweet chocolate chips
  • 4 ounces bittersweet chocolate, chopped
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • ¾ cup chopped nuts (walnuts or pecans), optional

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving about 2 inches of overhang on two opposite sides. Lightly spray with non-stick spray if desired.
  2. In a large heavy-bottomed saucepan, combine 3 cups granulated sugar, ¾ cup unsalted butter (cut into chunks), and ⅔ cup evaporated milk. Place over medium heat and stir constantly until butter melts and sugar dissolves, about 5-7 minutes.
  3. Increase heat to medium-high and stir continuously until mixture comes to a full rolling boil (big, lazy bubbles across the entire surface). Once boiling, set a timer for exactly 5 minutes and stir constantly.
  4. After 5 minutes, remove pan from heat immediately. The mixture should be slightly thickened and pale golden.
  5. Working quickly, add the entire jar of Marshmallow Fluff, 1½ cups semi-sweet chocolate chips, and 4 ounces chopped bittersweet chocolate. Stir gently until everything is melted and smooth, about 2-3 minutes.
  6. Stir in 1 teaspoon vanilla extract and ¼ teaspoon salt. If using nuts, fold in ¾ cup chopped nuts. Stir just until combined.
  7. Pour fudge into prepared pan and spread evenly. Tap pan gently on counter to release air bubbles.
  8. Let cool at room temperature for 30 minutes, then refrigerate for at least 3 hours or until firm (overnight is best for clean cuts).
  9. Lift fudge out using parchment handles. Place on cutting board and cut into 1-inch squares with a sharp knife, wiping knife clean between cuts.

Notes

Make sure Marshmallow Fluff is at room temperature before adding. Stir constantly during boiling to prevent sugar crystallization. For humid weather, boil an extra 30 seconds. Fudge tastes even better the next day.
