  • ½ teaspoon salt
  • ½ cup (113g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • ¾ cup (150g) packed light brown sugar
  • 1 large egg, at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (245g) pumpkin purée (not pumpkin pie filling)
  • 1 ½ cups (270g) semi-sweet chocolate chips
  • Optional: ½ cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt. Set aside.
  3. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add egg and vanilla extract, whisk until combined.
  4. Add pumpkin purée and whisk until fully incorporated.
  5. Add dry ingredients to wet mixture in two batches, folding gently with a spatula until just combined. Do not overmix.
  6. Fold in chocolate chips (reserve a handful for topping if desired).
  7. Spread batter evenly into prepared pan. Sprinkle reserved chocolate chips on top and press in gently.
  8. Bake for 22-26 minutes, until edges are golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Cool completely in the pan on a cooling rack (at least 30 minutes) before lifting out using parchment overhang and cutting into squares.

Don’t overmix the batter to avoid tough bars. Use room temperature ingredients to prevent butter from seizing. Let bars cool completely before cutting to avoid crumbling. For best results, line the pan with parchment paper for easy removal. Bars taste even better the next day.
