These small-batch chocolate chip cookies are soft, chewy, and perfectly golden around the edges. No mixer required, just one bowl and a spoon, ready in about 20 minutes.

Ingredients

Scale
  • 4 tablespoons unsalted butter, melted (57 grams)
  • 3 tablespoons granulated sugar (38 grams)
  • 3 tablespoons light brown sugar, packed (38 grams)
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour (60 grams)
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup semi-sweet chocolate chips (60 grams)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Melt the butter in a microwave-safe bowl (30 seconds, then 15 seconds if needed). Let cool for a minute.
  3. In a medium bowl, combine melted butter, granulated sugar, and brown sugar. Stir for about 30 seconds until it looks like wet sand.
  4. Add egg yolk and vanilla. Stir vigorously for about a minute until the mixture is lighter and glossy.
  5. In a small bowl, whisk together flour, baking soda, and salt.
  6. Add dry ingredients to wet ingredients. Stir gently until just combined (a few streaks of flour are okay).
  7. Fold in chocolate chips until evenly distributed.
  8. Scoop dough into 6 equal balls (about 1.5 tablespoons each). Place on prepared baking sheet, spaced 2 inches apart.
  9. Bake for 8 to 10 minutes, until edges are golden and centers look slightly puffy and underdone.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack.

Notes

For thicker cookies, chill dough balls for 15 minutes before baking. Underbake slightly for chewier cookies. Store in an airtight container with a slice of bread to keep soft.
