These buttery, nutty cookies literally dissolve on your tongue. With a double coating of powdered sugar, they are the perfect melt-in-your-mouth holiday treat.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • ½ cup (60g) powdered sugar
  • 1 teaspoon vanilla extract
  • 2¼ cups (280g) all-purpose flour
  • ¼ teaspoon salt
  • 1 cup (120g) pecans, finely chopped
  • 1 cup (120g) powdered sugar (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Toast pecans on a separate baking sheet for 5-7 minutes until fragrant. Let cool completely, then chop very finely.
  3. In a large bowl, beat softened butter and ½ cup powdered sugar until light and fluffy (2-3 minutes). Add vanilla and beat until combined.
  4. In a separate bowl, whisk together flour and salt. Gradually add to butter mixture, mixing on low until just combined.
  5. Fold in finely chopped pecans until evenly distributed. Dough should be soft and slightly crumbly.
  6. Cover bowl with plastic wrap and refrigerate for exactly 30 minutes.
  7. Preheat oven again if needed. Roll dough into 1-inch balls and place 2 inches apart on prepared baking sheet.
  8. Bake for 10-12 minutes until bottoms are lightly golden and tops are set but not brown.
  9. Let cookies cool on baking sheet for 5 minutes. While still warm, roll each cookie in powdered sugar. Place on cooling rack.
  10. Once completely cool (about 20 minutes), roll cookies in powdered sugar again for a snowy coating.

Notes

Chill the dough for exactly 30 minutes to prevent spreading. Toast pecans for deeper flavor. Double coat with powdered sugar for the best snowy look. Cookies taste even better on day two or three.
